I haven't done a schooling show since I was tiny and just doing flatwork, so I'm way out of the loop. Am I correct that a Hunter class would be judging the horse and would include jumps, but a Hunter Under Saddle class would judge the horse but only on the flat (no jumps)? Is there any other big difference in judging that I should know about?

that's correct hunter under saddle is a flat class with no jumps and hunter classes will normally be over fences, the judging is basically the same but in different aspects because you are doing two different things, but it comes down to equitation for the rider and how the horse preforms and how you work as a team both classes are judged similar in that, both classes are judged on the horses movement and form
Usually they'll say "under saddle" (or u/s) or "over fences (o/f). If it says under saddle, then it is a non-jumping class.
