I need to bring in a TYPICAL dish from a Spanish-speaking country for my Spanish class. It needs to serve about 10 people. It has to be something really easy to make, really fast to make, and vegetarian. It could also be a typical drink, but it obviously can't have alcohol and it can't be something overly simple. It would also be preferable if it didn't have to be microwaved or refridgerated, but it is not absolutely necessary. Any recipe ideas? You may also post links to recipes.
Update:My teacher says tacos and nachos don't count

A tomato soup, served cold or room temperature, no cooking needed.
4 cups tomato juice
1 onion, minced
1 green bell pepper, minced
1 cucumber, chopped
2 cups chopped tomatoes
2 green onions, chopped
1 clove garlic, minced
3 tablespoons fresh lemon juice
2 tablespoons red wine vinegar
1 teaspoon dried tarragon
1 teaspoon dried basil
1/4 cup chopped fresh parsley
1 teaspoon white sugar
salt and pepper to taste
Directions
In a blender or food processor, combine tomato juice, onion, bell pepper, cucumber, tomatoes, green onions, garlic, lemon juice, red wine vinegar, tarragon, basil, parsley, sugar, salt, and pepper. Blend until well-combined but still slightly chunky. Chill 2 hours to blend flavors, can be served cold or room temperature.

7 Layer Dip
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained (optional)
2 cups shredded Cheddar cheese
Directions
In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives, if using. Serve with tortilla chips.
Since it only has to be from a Spanish speaking country and not Spain then it is pretty easy. Most Mexican foods are vegetarian such as a bean burrito, enchiladas, cheese quesidias, etc. Just make sure that the refried beans are not made with pork fat and are vegetarian and most meals from Mexico will be pretty easy to make.
With not being able to use a refridgerator you might be better off just bringing in salsa and chips. Easy to make and easy to serve
There might be more than you are thinking.... MOst dishes can be created into a vegetarian dish.
Empanada's- You can choose do make an emanada with a cheese, vegetable or fruit filing.
Vegatarian Taco's- You can use meatless vegatarian taco filler.
Tostones- made with plaintains are vegatarian.

they are typically made from fried or toasted corn tortillas (which are vegan obviously). you can either fry them yourself or buy them at the store if you can find any. of course you wouldnt fry them in animal fat or anything, maybe canola oil or corn oil. fry them just enough that they get golden and crunchy. add refried beans (I've just realized until now that my mother cooks all of this really vegetarian since she doesnt use lard) you can use vegetable oil to refry them, or buy the canned ones of course, just make sure it doesnt contain lard.

cover the tostadas with the refried beans, then add whatever toppings you'd like! since it's vegetarian skip the meat and just add this:
-shredded lettuce, then
