The original Fantasy Fudge is the all time best chocolate fudge. They have a new recipe, but my Grandma gave me the old one. It's a really creamy fudge. It always works too. Here's the link. You will see the photo of the fudge plus the marshmallow cream you need to make it - in case you're not familiar with it.
Cook till soft ball stage. Remove from heat, add vanilla, place pot in cold water for rapid cooldown, while stirring constantly. Take care not to get any water in the candy. It may be that the water will get too warm, add ice to it if that is the case.Stir constantly till candy thickens and has nice sheen. Pour into cold, buttered, platter. Place in ice box till candy sets. Cut into squares and place in container lined with wax paper.
Here is how my momma showed me. into a 2 quart pot off the stove add 2 cups granulated sugar,1/3 cup of Hershey cocoa,2/3 cup of half and half, 1 tablespoon of vinegar,2 tablespoons of butter, and you stir. Put that on top of the stove medium heat and stir, stir, stir. for about fifteen minutes. The idea is you drop a small amount into ice water and it balls up on the bottom. When it reaches that stage you remove it from the heat and add 2 teaspoons of vanilla extract and you set the pot into the kitchen sink filled with ice water and you stir, stir, stir, for about 15 more minutes, taking care not to get any water in the pan!. when that chocolate gets real shiny and start to cool down then it get harder to stir, you ain't did yet, keep stirring, stir some more, change the water if it get hot you need COLD water.when it gets right you pour it into a cold buttered dish and put it into the ice box let it setup then cut into squares. when it is right ,that fudge will get a sugary glaze on the outside and have a slightly sandy type taste on your tongue. the whole process from start to finish take about 35 minutes. That fudge will not need to be refrigerated. In fact it will be more better if it is left in a nice cool place hidden safely away from little hands. hee hee
Line 8” square pan w/foil; lightly grease foil w/butter & set pan aside. In small bowl, beat cream cheese. Gradually beat in powdered sugar, cocoa, milk & vanilla extract. Turn into prepared pan. Chill for 1 hour, or until firm. For peppermint layer, beat cream cheese in small bowl. Gradually beat in powdered sugar, milk & peppermint extract. Stir in peppermint candy. Spread evenly over chocolate layer. Chill for 1 hour, or until firm. Turn fudge onto cutting board; peel off foil & cut into squares.
