I have a son with gluten and casein Alergy.
I need help of make bread, waffel from scratch. (as pure as posible)
I know there is product / recepi using some "bought" product. unfortunately when i check it use butter (which come from milk)

For the waffles, you can use a milk substitute. You can also try some butter substitutes (shortening, margerine (which I don't like but it might be ok)some people use vegetable oil others use applesauce)

I can eat dairy, so I'm not all that familiar with subbing it for other things but hopefully that helps.
www.gluten.net has a lot of recipes.
I've made this bread recipe, and it's pretty good. It tends fall on me and be a little piece of bread, but it tastes good as toast or little sandwiches lol. She gives dairy/casein free directions as well:

You can find a lot of the flours at stores like Whole Foods or at health food stores. You can also buy the flours and xanthum gum from Amazon (don't omit the xanthum gum in recipes!)

There is a margarine called Earth Balance in both stick and tub form that works very well as a butter substitute. It is dairy free. I have found it here in Whole Foods. I also added two web sites that specialize in recipes for gluten and casein intolerants.
There are lots of different kinds of flour such as rice flour, potato flour etc. Like normal flour they provide complex carbohydrates which provides energy. Potato floor is nice and often used in various indian breads. It tastes similar to normal flour too. With yeast I guess you can make it into proper risen bread. As substitute use margarine instead of butter, its healthier too. In general bread does not need to contain any milk only some recipes do, so you can omit milk and it will still be good.
Substitute the milk with goat's milk. You can usually find it at Wal Mart. For flour, you could use brown rice flour or corn.
