My hubby doesn't need gluten-free but he's borderline diabetic so I don't use flour for him. I have found Coconut flour does the trick and is gluten free. It raises better than Almond flour.
You can buy the flour from your local grocery store if they carry Bob's Red Mill products. Even if they don't have it stocked, they can order it for you - that's what I did.
But what I found with the flour-free recipes is you have to make up the "adhering" qualities with eggs.
If you go to Google and type in Coconut Flour Chocolate Cake, you'll find a basic recipe for using the Coconut flour and that will get you started.

I would modify this recipe for banana nut bread muffins.
2 cups almond flour
1 teaspoon baking powder
3 egg whites
1 large egg
1 cup splenda or any sugar substitute
1.5 teaspoons banana extract
0.5 teaspoon vanilla extract- no sugar added
1/8 teaspoon salt
2 tablespoons softened butter unsalted
(a few cut up dates and 1/4 cup walnuts to get the date-nut added -- not part of book recipe but should work)
preheat oven to 350
mix everything with wooden spoon and fill 6 paper lined muffin cups 2/3 full with batter
bake 20-25 minutes until toothpick pulls out clean
cool for 5 minutes and enjoy

Can you just make a GF bread mix, such as Pamela's Products Bread Mix,a nd then adjust it for dates? SOrry Im a from the mix kinda cook! :)
