Baked Ranch Chicken
Ingredients -
1 envelope Ranch Dressing Mix
1 cup Italian Bread Crumbs
1/4 cup Freshly Grated Parmesan Cheese<
1/2 cup Butter or Margarine, melted
6 to 8 Boneless Chicken Breasts
Preparation:
In a shallow dish combine dressing mix, bread crumbs and Parmesan cheese. Dip chicken in butter then roll in crumb mixture.
Place in a greased baking dish and bake at 350º F. for 45 minutes or until juices run clear.
Get a big old deep cast iron skillet. If you don't have one or can't get one, you might as well quit cause you can't make proper fried chicken. Right, so put the skillet on the hob and crank up the heat. Pour in oil (peanut or grapeseed) to about 1/2" deep. Season your cut-up chicken with salt & pepper and cayenne, if you like--I don't care--and put it in a medium size paper bag. Add 1/2C or so flour and shake to coat. When the oil reaches 325F, start adding the chicken, skin side down. Do this slowly so that 1. the oil doesn't splash out on you and 2. so that it doesn't cool down too quickly. Cook for 10 minutes and turn it skin side up. Keep monkeying with the heat so that the chicken is frying at a steady, not fast rate. After 10 minutes, you can start turning it to brown the sides and edges, 2 - 3 minutes per. Then flip it skin side down for 2 more minutes followed by 2 more skin up. Drain on paper towel covered newspaper. Times above are approximate--mine usually "looks" right at 20 - 30 minutes total cooking time.
Get the biscuit pasta, roll it out with dough roller. Then cut into two or three inch strips.. Cut the chicken into pieces. Put one piece of chicken and one small piece of broccoli and one small piece of cheese and roll it up. Bake it for ten minutes at 400 degrees. It's like a delicious crepe. Optional: You cook put a couple of mushrooms inside.
Cook rice and place in bottom of 13" oblong casserole dish. Heat soups and milk together. Pour soup/milk mixture over rice and stir to mix. Lay pieces of chicken on top of mixture. Sprinkle dry onion soup over top. Cover tightly with foil and bake at 325 degrees for 2 1/2 hours.
