I have adobe audition, a m-audio interface, and a audio buddy preamp. Whenever I try recording stuff it sounds really sloppy. I cant even mute the strings without it making a really loud, distracting noise when I play it back. Do I just need to perfect my guitar playing or is it something the computer or amp is doing?

Is it an acoustic guitar or electric? If it's electric, do you have an amp or is it plugged directly into the preamp?
If you have an amp, is the distortion really high? When you turn the distortion up, what it will do is make the quieter sounds louder and the loud sounds stay the same volume, so little things like fret squeaks become annoyingly loud.
If you're using the preamp you may just have to turn down the gain.
It may be a combination of needing to practice making less unwanted noises and adjusting the settings on your gear.
