I would make a blueberry cobbler. Blueberries are full of fiber and antioxidants. Great for you. Top with some vanilla frozen yogurt.

3 cups fresh blueberries
3 tablespoons white sugar
1/3 cup orange juice
2/3 cup all-purpose flour
1/4 teaspoon baking powder
1 pinch salt
1/2 cup butter, softened
1/2 cup white sugar
1 egg
1/2 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In an 8 inch square baking dish, mix blueberries, 3 tablespoons sugar, and orange juice. Set aside. In a small bowl, thoroughly mix flour, baking powder, and salt. Set aside.
In a medium bowl, cream butter and 1/2 cup sugar until light and fluffy. Beat in egg and vanilla extract. Gradually add flour mixture, stirring just until ingredients are combined. Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of filling as possible.
Bake in preheated oven for 35 to 40 minutes, until topping is golden brown and filling is bubbling.
Fruity desserts are a great option. Grilled fruit (peaches, pineapple, bananas) are very good with some vanilla yogurt and just a sprinkle of cookie crumbs. Or you can get some frozen fruit and blend it up for a fruit sorbet. Or make a baked apple. Take a Rome apple, core it, puncture it a couple times with a fork, then pour half a cup of Diet Dr. Pepper over it, and bake at 350 degrees for 45 minutes.

1/4 Cup Honey
1/4 Cup brown sugar
1 1/2 Cup mashed bananas (about 4 large bananas)
1/2 Cup walnuts
1/2 tsp cinnamon
1 tsp vanilla
2 eggs
1 3/4 Cup whole wheat flour
1/2 tsp salt
1 tsp baking soda
1/4 Cup HOT water
1. Preheat oven to 325
2. In a large bowl, mix honey, sugar, and applesauce. Add eggs and mix well. Stir in bananas and vanilla.
3. In a separate bowl, mix flour, salt, and cinnamon.
4. Add flour mixture to wet mixture (bananas, honey, etc.) in 3 parts.
5. In a separate bowl, add baking soda to Hot water and mix until dissolved. Add to batter.
6. Blend in chopped nuts.
7. Spread batter into a greased 9X5 loaf pan.
8. Bake for 55-60 minutes.
9. Take out of loaf pan and cool on wire rack for 1/2 hour before serving.
My husband and I like to slice it and toast it and add a little butter to it. It is really good like that. Or, you can refrigerate it and it tastes great cold.
This is a light version of tiramisu! Yum. With the splenda, fat free egg substiture, fat free cream cheese, and light whipped topping you save a lot of calories! The only thing that holds it back is the chocolate, but hey... splurge a little!

1 cup splenda
1 1/2 teaspoons vanilla
1 8-ounce package fat free cream cheese, cut into small pieces
1 8-ounce frozen light whipped topping, thawed
1 tablespoon instant espresso powder
1/4 cup hot water
1 cup cold water
1 fat free pound cake, cut into 1/2 inch slices

(food processor can be used to finely chop chocolate ahead
of time and set aside). In food processor with metal blade,
process egg substitute and splenda for 30 seconds. Add vanilla;
process 1 minute or until pale yellow. Add cream cheese pieces,
a few at a time, processing until smooth. Transfer mixture to
medium bowl. Cover; refrigerate 1 hour. Fold whipped topping
into cream cheese mixture. Set aside. In large shallow dish,
dissolve espresso powder in the hot water; add the cold water.
Quickly dip cake slices into espresso, turning to coat all sides.
Arrange slices in bottom of 13x9 inch baking dish or 12 cup
shallow dish, smoothing with fingers to mold cake slices
together. Sprinkle with half of the chopped chocolate. Top
with chilled cream cheese mixture. Sprinkle with remaining
chocolate. Cover; refrigerate at least 3 hours or overnight
Buy an angel food cake (or make one). Slice it and grill it just to get the grill marks and warm it up. serve with all different kinds of berries and fat free whipped cream.
Check out the Splenda website. I use it for many recipes. I especially like the mini cinnamon cheesecakes. I don't add the coffee to the recipe and they are scrumptious.

Berry-Good Mousse
1 envelope unflavoured gelatin
1/4 cup orange juice
3 cups fresh strawberries
1/4 cup icing sugar
1/3 cup whipping cream (optional)
4 egg whites
1/4 cup granulated sugar
Garnish:
Fresh strawberries, hulled
In saucepan, sprinkle gelatin over orange juice. Let stand 5 minutes to soften. Warm over low heat until gelatin has dissolved.
Meanwhile, hull strawberries and place in food processor or blender. Add icing sugar and process just until pureed.
Transfer to mixing bowl and stir in gelatin mixture. Refrigerate until mixture is consistency of raw egg whites. Whip cream (if using) and set aside.
In large bowl, beat egg whites until soft peaks form. Whisk about ¼ of beaten egg whites into strawberry mixture.
Fold strawberry mixture and whipped cream into remaining beaten egg whites.
Pour into 6-cup glass serving bowl or individual glasses and refrigerate at least 4 hours or up to days.
