I have a Singer sewing machine model no.1525. There isn't a plain straight stitch on the built in stitches. On the singer website it says this model has "25 stitch functions and 7 built in stitches"
What does this mean and how do I get to the other stitch functions?

Normally it is setting zero for straight stitch.
Open the manual and place it beside the sewing machine.
Go step by step, starting with winding a bobbin and threading the machine.
Then, with a scrap of fabric that contrasts with the thread, try each stitching function.
This is a much easier way to learn how to use the machine than reading page after boring page of an instruction manual.
Check your manual. If there's no listing of a straight stitch (which would surprise me very much), set up for a zigzag stitch of width 0 and the desired length.
