So I've just read that lunch is an abbreviation of luncheon. Does that mean the terms are interchangable?
I'm in the u.s and here my understanding of the word was a luncheon was strictly an event, not something you could eat. I could say im going to eat lunch, but would never say, I'm going to eat luncheon.
Is this just because nobody knows lunch is an abbreviation?

I think you are right. It may have started as an abbreviation, but it has changed into the maening that you express. Luncheon is a get-together, some what fancy. Lunch is just what you eat at noon, or a non-fancy meal that you eat at lunch time. We say, "I'm going to lunch now." "Let's eat lunch together." "I usually bring my lunch to school." "She is planning a luncheon to celebrate her daughter's engagement."
