Fruits and vegetables actually have all the protein your body needs as long as you eat enough of them. I recommend that you research a "raw food diet" or 80-10-10 diet." There are people who live (and thrive) for years with this lifestyle. People swear by the health benefits of it, although you may want to consider getting a little bit of B12 (which would need to come from dairy/animal products) or a B12 supplement. B12 is made inside the body, so that is a controversial issue. I also recommend watching Forks Over Knives (available on Netflix). It has a lot of information on a vegan diet and the effects of animal products on the body (cancer, heart disease, etc.)
As far as how to make it easier, just keep LOTS of raw fruits and vegetables on hand and EAT AS MUCH AS YOU WANT of these raw fruits and vegetables. I promise that you will lose weight if your body truly has 40-50 pounds to lose.
Oh, I also recommend looking up Kristina Carrillo-Bucaram on Youtube. She has been a raw foodist for 7 years. She has tons of great information.
Don't limit your diet to only fruits and vegetables. Although fruits and vegetables are GREAT and should be a staple in every diet they don't provide certain macro/micro nutrients your body needs to function healthily. Specifically fruits and vegetable are typically low in fat and protein. I know everybody wants to avoid fat in their diet but in a balanced for a healthy adult fat should represent no less than 20% of your daily calories.
My advice for weight loss would be to eat a well rounded diet, with plenty of fruits and vegetables- but also other food groups, and make sure that you are exercising regularly throughout the week.
