Partially thaw the spinach and place in a food processor. Pulse until very finely ground. Add to a bowl. Manually chop the water chestnuts into a small dice. Add into the bowl. Mix the rest of the ingredients into the bowl with the chestnuts and spinach.
Cut the top off one round loaf of sourdoug. Hollow it out. Pour the dip into the hollowed out bread bowl. Cut up the rest of the bread (including the second loaf) into large chunks (or tear the bread) and serve on a platter.
Mix a packet of thawed & well-squeezed [drained] spinach with an 8-oz tub of ricotta along with some minced garlic bits, use to layer between lasagne-type flat noodles and top with sauce, or stuff the spinach-ricotta mix into large shells, cover with a nice meaty sauce and bake until bubbly. That's just Italian style usage...here are a couple more:
Thaw, squeeze & drain one package, combine with 4 beaten eggs and about 1/2 cup grated parmesan or romano and a little half-and-half [1/2 cup or less]. Place in an unbaked 9-inch pie crust and bake until a knife comes out clean when you poke into the middle. Quickie quiche and very nourishing.
Mix with 1 package of Knorr dry veggie soup mixture, 1 small can [drained] water chestnuts, 1 cup of sour cream and 1/2 cup of mayonnaise. Add chopped black olives or capers and some chopped or minced garlic [dried or fresh]. Result? A dip of super-good flavor...good with chunks of French bread or pita bread pieces.
Having a couple of packages of frozen chopped spinach in your freezer is like having a secret bank account. Enjoy!
We love the Knorr spinach veggie dip, too. But not with miracle whip. Mayo please.
I like to take the dip and add it to mashed potatoes with cheese and crumbled bacon. I put it in a casserole dish and bake until hot. Then I put on some French's fried onion rings and cook another five minutes. Talk about good.
THAW AND DRAIN your frozen spinach(colander or paper towel depending) first. You don't want a soggy pizza or lasagna with a pool of liquid on the bottom. Ugly.
