I used to make cinnamon sugar roasted pecans, but the recipe calls for beaten egg whites to make the sugar mixture stick to the pecans. Is there a vegan alternative that will get the sugar to stick? I tried using some vegetable oil, but after roasting, the sugar just fell off the nuts.

I've heard recently that flax or chia gel works wonders for replacing egg whites and can even be whipped up into a decent meringue. I've yet to try it myself, but it sounds promising.

I think the best thing you can do is melt the sugar in some hot water to make like a syrup, and then coat your pecans with the cinnamon, and more sugar.
Or you can just use honey as the sticking agent instead.
I dont know but if you are looking for egg substitute otherwise in cooking 1 can of garbanzos blended till smooth and then 1/4 cup = 1 egg wonderful in patties and loafs. never tried using it for omeletes.

You're out of luck if you're not using egg white.
It's a protein in liquid form. Sugar is just sugar, oil is just oil. Neither will bind to the other ingredients chemically, like protein does!
Just a chemical property you can't get around.
Soy yogurt. Or egg free Mayo available in health food stores
