I tend to make my sandwiches the same as my salad, but on bread. Last night it was kale, mini bell peppers, rosemary lemon baked tofu, tomatoes, cucumber, and avocado. There was just a touch of olive oil massaged into the kale.
Another delicious option is cashew cream cheese and fresh berries on bread, toast, bagels, or muffins. To make the cashew cream cheese, save the pulp from homemade cashew milk and stir in a tbs or so of vegan yogurt (not entirely necessary, but it makes it extra tasty.)
I also like to sauté zucchini and mushrooms in garlic "butter" and basil, then add diced cherry or grape tomatoes and/or red bell pepper. Vegan cheese or nooch sprinkled on top is optional.
It may sound nasty, but my family puts leftover spaghetti on "buttered" bread.
There is a cookbook called Vegan Sandwiches Save the Day you may want to peek at. I also found the following site. There is a lot of fake bacon, but you could always use cruspy temper in place of Vocal or Morningstar or whatever.

I just did this last night:)
-Spinach
-Fried potatoes
-Tomatoes
It's soooo good:) Chop then fry the potatoes until they're brown and crispy.
Hummus with veggies - red onion, tomato, cucumber - is great, especially on a vegan bagel.
Take two chunky slices of eggplant, and between them put:
lettuce
guacamole
tomato
carrot strips
and your favorite condiments/seasonings
etc.
I do it all the time. :)
Peanut butter and jelly.
