I have a crazy idea.. go talk with your physician..
When I first went vegan, I had something along the same problem for a bit. Not everyone gets it seems. But I have heard some people say your system has a "clean out." That or your body has to get used to your new diet.
Make sure you know what you need to stay healthy.

I assume that only eating stir fry most of the week might do it too. I know I was still a little bit ignorant as a new vegan myself. You need to have variety in your diet. Fruits, veggies, grains, protein and vitamins and minerals.
Do you know what to get at grocery stores? Maybe you are just unsure of what you can eat as a vegan? Here is a list of what I get at grocery stores, just something to run through.
FRUITS AND VEGGIES
*strawberries
*blueberries
*pineapple
*mango
*apples
*bannas
*baby carrots
*red peppers
*romaine lettuce
*Baby tomatoes
EVERYTHING ELSE
Oreos
earthbalance buttery spread (just cheaper at regular stores I think)
Amy's Tofu breakfast scramble and no cheese bean enchilada
Boca burgers of some sort
Triscuits (I carry these a lot as they make a great snack and fill me up for awhile when I'm hungry. Most of them are vegan, not sure about the sugar thing some vegans avoid though)
Chex mix Original (not actually sure if these are vegan, but they looked acceptable)
Sunflower seeds
Potato chips (many are vegan) Go for the healthier kind like "food should taste good"
gingersnap cookies (many that come in a box and are rather hard I think are vegan, mind the sugar)
Whole foods has an even huger selection. I will give you a list of stuff I get there aside from your basic fruits and veggies and grains.
Eden's organic vegan macaroni and chresse
torurky slices
smart life tofu dogs
Thai Kitchen noodle products (on the back below nutrition information it will tell you if it's vegan or not)
Simplay asia noodle bowls.
Annie Chun's noodle bowls.
Ricera vegan yogurt
Gorilla munch cereal
boca meatless chicken nuggets
Gardein meatless strips (they are expensive but they are really good)
Tandoor Chef Vegan noodles and their balanced vegetarian etree'
Amy's No Cheese vegan pizza
Daiya Vegan Cheese
Rice milk (you can also get soy, almond, hemp, oat, hazlenut or coconut. But the hemp, oat, and hazelnut tend to be pricer.
Sunshine burgers

I just went vegan 2 days ago, too! Anyway, I'm not experiencing diarrhea, but when I went vegetarian I had horrible stomach pain. The only significant thing I am experiencing is headaches. I may be bypassing the diarrhea because I am drinking water religiously AND I'm taking an oral probiotic (to be honest, I don't know if it's vegan but I've had them for a while so I might as well finish them). Each supplement has 2 billion cultures. It makes your stools solid within a matter of days, but it does make you a little gassy. I just thought I'd mention the probiotic since diarrhea can kill of the good bacteria in your colon, and to really reap the benefits of this lifestyle, it is best to have a properly functioning digestive system with good bacteria, although as a vegan I'm sure you know that. Good luck!!
What are you eating now?
---------------
Ok, it sounds pretty good so far. BUT, the jelly from the Peanut butter and Jelly sandwich might have too much sugar in it, all jellies do. It's always wise to monitor the amount of sugar you eat.
As far as the pain and the messy pooping goes, it sounds like you are detoxing.
Years of meat abuse is coming out with a vengeance..
You are most likely pushing out the parasite that were happy with your previous meat diet.
There's no such thing as "dairy or meat withdrawel".
You probably ate more fiber than you're used to (ie you never eat veggies and now that's all you're eating), and fiber makes things liquid and movable, hence you will have diarreah.
Also, something you are eating now that you haven't eaten before, you might be allergic to, or have some other nasty reaction.
For example, if you're allergic to soy and didn't know it, and only know are eating a lot of tofu, you're going to get a reaction.
When you change your diet, you have to do it methodically and logically. You shouldn't just eat 1 thing all the time. Your body will let you know what it doesn't appreciate, as you're finding out.
Eventually things will level out.
Good luck!
No, it's not meat withdrawal. LOL!
Vegetables contain a lot of cellulose. Humans can't digest cellulose. So it passes on through our system as fibre. And too much fibre can cause bloating, cramping and diarrhea.
Tofu is soy. Could you be allergic to soy? It's a very high allergen food....number 3 or 4 of the top ten, I think.

You didn't tell us what you are eating, but by the sounds of it you need fibre in your diet...
Dairy/meat are MORE LIKELY to give you those problems, so I doubt it's that
You probably just began the process of becoming a woman
