Depends on the market you're writing for. If writing for kids or teens, I'd probably use the third one; for adults, the second one only I'd just write: Baxter felt a pang of anxiety when he contemplated his English exam.

My English teacher always stressed the use of "big" words when writing. Using that rule of thumb, the second sentence would be the better choice of the three.
