I don't know what you need and what you can afford but, there is the Talimhane Region, very near to Taksim, where there are lots of 3-4-5 star hotels and comperatively safer.
There are also smaller boutique hotels, aparts all around Beyoğlu, in Taxim, Cihangir, Galata, etc..

I Think you would be best staying in Beyoglu,it has lots to offer including shops restaurant and bars,But don't want to put you off but when I was visiting there with my husband who is turkish I had my purse and credit cards stolen,and that was when I was walking around Beyoglu,so do be careful if you stay there or visit there.
