Each breed has different traits. Mixing them will give you different traits. It will not average out between the two, it will go with one or the other. Some could have the fantastic personality of an aussie, or the snappy temperment of a poodle. Each dog is different. Just go to your local shelter and look at what types of mixes they have.
If I were you, I'd get a Pure Bred Australian Shepherd. Not a mix. With a mix, you don't know how it's going to end up.
I have a pure bred AKC Australian Shepherd and she's awesome.
She's VERY protective though. Whenever someone pulls up in the driveway, she'll start barking and the the hair on her back stands up. When someone she doesn't know walks in, she barks like CRAZY. They're also pretty hyper. They're a working dog and they need a job. Which is why we might be getting another dog, a Malinois. BUT, that dog is a much more advanced dog and will be showed in Schutzhund. Aussies aren't all that calm. They could be asleep and they could see you jumping around and they'd start jumping around with you. They're VERY smart and easy to train. The first week of having her at 8 weeks old, I taught her how to sit, down, and shake.
I don't know why people breed aussie poodle mixes. aussies and poodles are not alike. in many ways.
They will need a lot of training and obedience at a young age. Both breeds are fairly active. Depending on the coat length it might need regular grooming and trips to the groomers to stop fur matting and growing into its eyes. It will also need a fair bit of exercise with the shepherd in it as those are active dogs with lots of energy to burn. But by doing all these things your will form a close bond with your dog. And speaking as a vet nurse, you will need to get your animal used to being handled at a young age as any of the "little fluffies" we get in are always AWFUL biters and snappers as the owners think that because its SO cute it doesn't need obedience training.
Mongrels are unpredictable in health, coat, temperament, and size. The one thing you can probably guarantee with this mix is it will be extremely energetic. I hope you have your running shoes ready.

A mixed breed mutt won't have any consistent temperment/personality/affection across the board. They are not a purebred and anything can happen.
