As the uni fees here in the UK have risen to an extortionate 9K, I'm thinking about studying abroad for a cheaper, but still credible education. I'd appreciate any countries or even specific uni names in places such as Europe, Canada, or the states that would fit the bill. Thanks :D

Leipzig University in Germany offers a selection of degrees that are taught in English.
It's a great university and a great city, very historic and with nice buildings and parks.
I think the tuition fees are either free of charge or minimal, like 1K per year or something.
I have news for you - £9000 annually is very modest for university.
The UK government subsidized students for decades at a very generous rate and now they have reduced the subsidy somewhat - I suspect that there are too many graduates with useless degrees and not enough artisans and tech people available.
No chance of a lesser cost in the USA. Figure on somewhere between US$45,000 - 65,000 annually.
Compared to that, the £9K doesn't look all that "extortionate."

Most countries' cheaper rates only apply to people who are citizens (or children of citizens) of those countries. Everyone else has to pay a full tuition rate. It's also much more difficult to get into many of those countries as an international student - their low tuition rates for citizens translate to very high admissions standards, so that they aren't wasting public money on people who aren't prepared to succeed.
