I'm a vegetarian of two years and sometimes it just feels like I'm stuck in a rut as far as what I eat. Like the same meals everyday. I LOVE to cook, so I was just wondering, what are some veggie meals that you love?
And I love vegan food too so if there are any vegan meals you love I'd love to hear about them!

This is my favorite dish, and it's very easyr to make:
SAVORY SWEET POTATO SOUP:
(Ingedients)
1 tablespoon extra virgin olive oil,
2 red onion, chopped,
1 Large stalk celery, w/ leaves chopped,
8oz cremini or white button mushrooms, chopped,
3 cloves garlic, minced,
1 teaspoon brown sugar,
1 teaspoon reduced sodium tamari,
8 cups vegetable broth,
1+1/2 cup of water, plus more if needed,
3 large sweet potatoes, cubed,
2 cups of fresh green beans, in bite size pieces,
1 parsnip, sliced,
sea salt,
frshly ground pepper,

Heat the oil in a soup over medium heat. Add the onions and cook, stirring occasioanlly, until slightly softened, about 5 minutes. Add the celery and cook, stirring occasionally , until tender, about 8 minutes. Add the mushrooms and cook, stirring occasionally and adding a bit of water as needed to prevent sticking, until tender, about suagr,and tamari and cook, stirring occasionally, until the onions are golden, about 5 minutes. Stir in the broth, water, sweet potatoes, potatoes, greens, and parsnip, adding more water as needed to cover the veggies. Decrease the heat to medium-low, cover, and simmer, stirring occasionally, until the veggies are soft and the flavors are melted, about 1 hour. Season with salt and pepper to taste.
Cheese corn snacks, baked vegetarian lasagne with spinach and broccoli layering with white sauce and lots of cheese, Pasta, Mint coriander soup etc
