When you watch a movie and hear an orchestra in the background, who is playing? Is it people who are in orchestras and symphonies, and then movie producers choose them (either individually or the whole orchestra)? Do musicians send their resumes to movie producers, or get agents or something?

Most of the time the producers arrange for orchestras or groups to play the music. Often the composer has people he likes to work with that they hire. Or maybe thru a musicians union. As for how they get the gig in the first place, I suppose it's like any other gig. You audition for a group or orchestra that then gets hired, or like I said the composer knows you already.
The song writer also known as the composer has his own group of individuals who specialize in specific instruments. This list has multiple names for each instrument (incase another person is unable to do it) which will make up an orchestra. Most of these people have done movie scores before and know how it all works but for new comers it's kind of like what an actor has to do and go to auditions. I believe some of them have agents but its all about networking. If you get in with the right composer lets just say you may hit the jackpot.
The orchestras are usually under the employ of the studio or producer. That is what they do and they get paid well.
On ocassion the director or producer has certain musicians or orchestras that they work well with and are handpicked.
I have a huge collection of filmscores...it's my favorite type of music. For big budget films, it's usually an established orchestra that does the soundtrack (LA Phil does a lot.) Studio musicians are contracted through the music union for other studio work.
Well most of the time the composers who get their scores on a movie are renowned composers who already have a nice little resume on them... An example of this would be John Williams, who has composed everything from Jurrasic Park to Jaws, to Star Wars... And then you have Hans Zimmer who of course has Gladiator, Man on Fire to name a few... It would be very hard for a composer to get their score on the movie, especially with such names as these to contend with...
i do no longer understand in the event that they may be stable for figuring out, however the Pirates of the Caribbean soundtracks are particularly stable. additionally, i got here across that techno remixes of classical track paintings nicely for this purpose.
