I have to make a peach pie today, but the peaches I bought are still rockhard. Yuk!
I don't know if this is the same as poaching, but if I slice them and cook them in sugar and water will that method help to soften them for the pie?

Personally, I'd saute them in a little butter over low heat with some of the sugar until they have softened some. It will help remove some of the excess moisture at the same time. I know of an excellent apple pie recipe that par-cooks the apples in the same way.
You can't make unripe peaches any riper by cooking them. Cooking them in sugar will soften and sweeten them a bit, but you'll still have unripe peaches.
