I've wanted to be a high school English teacher since I was a kid but it doesn't seem practical anymore monetary wise. I have a backup profession though : Lactation Consultant. The money is better an LC and I like the nutrition aspect of the job and technically I would still be teaching. I know I can't do both so which one? Also, I am a single mother of a 3 yr. old so most of my classes would have to be online & I could be done with an LC certification in about 2 years. Which sounds best?

Let me suggest a different point of view. As a single mom, I would think that benefits would be of great importance, such as health care and a retirement plan. You can get those as a public school teacher. However it will take at least four years in college.
As an LC, your online sounds like you would be self-employed. You would have to have an enormous client list, I would think, to be able to get private health care.
Perhaps you could work in a maternity ward in a local hospital. Still, they only need just a few, and I would guess that those women may hold those jobs for many years. I wonder if you would need further nursing training, besides the LC certification to work in a hospital. Association with a hospital could give you access to benefits.
