I've noticed that whenever am downloading something using utorrent, there is something being uploaded?

what are seeders?
Is it that my stuffs from my pc are being taken without me knowing it?

Yes. when you DL something from a P2P and it stay in the original file on your computer it will upload that file to other people who are also trying to get the same file. or it could be a different file you have already DLed being sent to some one else who is looking for it.
It's not being taken from you, your computer is seeding (uploading) as well as downloading, it's part of the deal. It's called give and take. When your computer has finished downloading you should seed until you have uploaded at least 100% or more.
Torrent is a file used by a peer to peer program to direct it to a file that is shared across many other computers so that it can download the file.
joe, mike and sue all have 'file.mpg' on their pc. you want it. you download the torrent file, your torrent client works out through a central tracker that the file resides with these three people, and it downloads bits of it from each of their computers.
