I'm looking to replace all 4 speakers in my car (only one of four has been blown but, I figure I mine as well replace all four)
What defines good car stereo speakers?
What brands should I avoid all together?

What defines a good speaker is how you like how it sounds.
Go to your local shop and grab a listen. Your ears will thank you.
As far as what defines a good brand, that's all up to what you think sounds good to you. Everyone has different tastes in what sounds good to them.
Some of my personal favorite brands are:
Pioneer, especially the kevlar cones but it's recommended that you use an amp with these. go with some g-series if you're just wanting factory replacements.
JL Audio, the evolution-c5, again amp is recommended.
Memphis is also a brand you could look in to.
Infinity seem to do ok.
Some that i don't personally car for:
Audiobahn
Sony
JBL
Dual
Jenson
Again, these are just personal preferences and it all depends on what sounds good to you. Hope this gives you an idea of where to start.
