I am sick and tired of all the run-on sentences, as well as the OVERLY used word "AND". I feel as though my English and grammar becomes dumber after reading certain parts.

It would be far better for you to take a good look at as many different versions of the bible as you can find. Maybe if you choose a passage that you know quite well and compare that passage in quite a number of versions you might find out which seems to be the best FOR YOU. Any version that you cannot completely understand or don't feel comfortable with will just make reading the bible a chore rather than a pleasure.
TRy the Holman Christian Standard Bible with Commentary. HCSB I find it very useful, the commentary gives historical information.
I'm not Catholic, but I recommend Catholic-approved Bibles. Their scholarship is excellent:

I personally use the EOB -- Eastern/Greek Orthodox New Testament, the Καινή Διαθήκη [New Testament in Koine Greek], and the Septuagint with Apocrypha --Greek and English.
What you DON'T want is the non Christian Jehovah's Witnesses-made book, the New World Translation. It's considered heretical by Christian churches.
It is a translation which tries to accurate follow the original bible. To try and do what you want would re-write the bible!
The only reason for translations is to allow people to read and understand it!
This is probably not what you want to hear but almost every Bible Theologian on the face of the planet Earth will agree that the new world translation of the Holy scriptures published by Jehovah's Witnesses is the most grammatically correct literally proper Bible in existence even encyclopedias that don't like Jehovah's Witnesses carry this fact
So is it the King James Version you're dismissing as not "proper" English grammar or sentence structure? Need to know what standard we're judging by here.
Maybe you'd like one of the ones with names like "Modern" or "Contemporary" in the title, like The Living Bible.

This is a paraphrase, not a translation.
Any English versions are meant to be translations - not interpretations.
If the originals contained a lot of 'and's the translation should also.
And as no punctuation was used in the originals, there are bound to be a lot of run-on sentences.
