I'm hopefully graduating in the spring of 09 and plan on going to grad school for slp. Does anyone have any insight on programs that offer a lot of financial aid? (ie assistantships, fellowships) Also.. I just took my GRE and I got 1130 (560 verbal, 570 math). Is that a score that will get me into grad programs?

That is a very nice score. Congratulations to you for that.
Of the grad programs I was admitted to, Northwestern did not offer me any aid (they try to reserve that for their PhD students rather than give it to the MAs).
Ohio State University gave me a nice fellowship, and the University of Illinois at Urbana-Champaign (UIUC) did not offer me any aid initially, but I got two fellowships that I applied for once I was there.
Programs that are in-state will most likely be cheaper for you. If you can declare yourself as independent on your FAFSA that would probably help. Also, look into which of the schools you are interested in have research that you are interested in and can help with. Several people at UIUC had fellowships, assistantships, TA positions, and/or all of the above in addition to what ever financial aid the gov. provided.
