For main courses, a little work is necessary but it can be very simple to eat gluten-free. Think about using rice, potatoes, or quinoa instead of pasta and bread. Switch out wheat-filled dressings and marinades and use fresh spices to marinate meats and vegetables.

Most of the main course recipes in my "normal" cookbooks are gluten-free, or can easily be modified to be gluten-free. Gluten-free recipes are amazing, but learning to modify can open up so many options.

Some of the easiest modifications include:

Pure corn tortillas instead of flour tortillas

Gluten-free all-purpose flour instead of wheat all-purpose flour (add a little xanthan gum for baking)

Gluten-free noodles instead of wheat noodles (brands: Ancient Harvest, Schar, Pappardelle, etc)

Gluten-free soy sauce instead of regular soy sauce (brands: Tamari or Kikkoman Gluten-Free)

Gluten-free breadcrumbs (for fried chicken, GF mac and cheese, onion rings, cheese sticks, etc.)

Gluten-free pizza crusts for homemade pizza (Glutino brand frozen 7" crust is my favorite, but you can mix up your own crust if you feel like more of a challenge)

Oh, one more idea. If none of that is quite what you're looking for, try www.allrecipes.com. There are a lot of gluten-free sweets, breads and meal recipes to look through on that site. The best part is that they're all reviewed by users, so you can get an idea about which recipes will taste best before you go to the trouble to making them.

Soy makes a great break from meat, and comes in many different forms, all of which contain no gluten. Many vegetarians and vegans use soy to replace the meat in their diet, crafting it into things like tempeh and tofu. Whether or not you use these to reduce the amount of meat you eat, they do make healthy alternatives to meat when you want a meat free meal. Just because an item is listed as being made with soy does not mean it is automatically gluten free. Also verify that the other ingredients are gluten free if ordering at a restaurant, or check the label to see for yourself what else is in it.
