I'm going to be cranking a C in Organic this semester... if I bust my butt. I'll go from an overall GPA of 3.5 to 3.36... not bad? I'm not sure.
Is it better to muck it through with a C?
Or is it better to withdraw and take it again for (potentially) a better grade?

One class drop you from 3.5 to 3.36? Doesn't make sense unless you don't have many credits yet. You'll have plenty of classes to raise your gpa back up. Unless you want to go into the medical field or be an organic chemist, a C isn't as bad as retaking the class- which you got to remember costs a lot of money.
I've faced this exact same dilemma many times, and with work I've passed every time. If I had chosen to withdraw all those times I'd be two years behind. That's no exaggeration. Really, the "I might not pass" feeling is just a part of college.
Depends. Is it going to take you down to less than full time? If you want to get into any type of grad school you are going to want to have a higher grade. I'd withdraw and take it next year if it doesn't bring you down below full time. One W doesn't look that bad on your transcript if you get a better grade the next semester.
