my husband is making bbq spare ribs for dinner and I have the following veggies I would like to use (at least some of them) to make a side dish...
eggplant
zuchhini
tomatoes
onions
pablano peppers
jalepenos
red bell peppers
peas
corn
green beans (canned)
diced tomatoes w green chilis (canned)
sweet potatoes
stewed tomatoes w green bell peppers and onions
fresh garlic
capers...
cooked white rice
Ideas are welcome and appreciated!!
Update:Not really looking to meld ALL of this together... more looking for an idea that brings a few of these ingredients together..

You could saute the peppers in olive oil with a little salt and pepper. You could put the zucchini in a pan with onions and garlic in a pan with olive oil. They should be soft. The previous two go good together. You could stew the tomatoes, rice, chopped peppers, and eggplant with chicken broth and a little curry paste and peanut butter. (Very small amount.)
We usually wash some sweet potatoes really well, wrap in foil, and put them on the grill. The potatoes get cooked really tender and come out perfect. And to accompany your ribs and sweet potato I would slice the zucchini length-wise and slice the onion into big chunks then grill them indirectly with a little olive oil, salt, and pepper.

stir fry the peppers, tomatoes and chillies, chop them all and put them in a bown with the rest of the veg, add some salt, olive oil and vinegar and you're all set.
You can serve on a bed of lettuce.
