I need to figure out which class to take. I have three years of French under my belt, but at work I'm always around Spanish-speaking people, so I'm half convinced to take it. Which one is more useful [I live in America, and my major is Environmental Biology], and which one is more practical to take?

Probably Spanish. If you already know some French, it may be useful to learn as much Spanish, especially if you are going to be around Spanish-speaking people frequently. I'm not entirely sure which language is best suited to your major, though.
Spanish,I don't know why You took French?
Spanish is spoken by a huge amount of people ,wherever You go in the world ,there it is ,like English and Chinese.
I am American Indian, America was invade by British and Spanish ' s people ,so if You already know one,You will be better off learning the other. I speak both of them beside my native american indian language.
I'd say Spanish, since it's spoken more than French in America and is more useful than French to you. More practical would be...well I don't know actually, I haven't studied Spanish yet Dx, but I'd say Spanish, since they got 50 ways of conjugating a verb xD....but then again French verbs got many ways of conjugating a verb as well....~ anyway, go for Spanish =3.
The way i work it out is like his, French is the language of love, Spanish the language of sex. Make your choice.
Chinese is limited use outside of the Chinas, and spanish is just spoken in spain, the Americas, and some other places.
