about a month ago i got dual exhaust on my v6 mustang and just about 2 weeks ago i could hear like some kind of air escape from under my car so i figured i hit something and damaged the pipes or mufflers. i check but i didnt find anything wrong with the pipes or mufflers. i also notice it didnt have any coolant in it so i put more but then like the next week i notice it was gray and the check engine light come on. so does anyone have any idea what could be causing this?

Water from your cooling system could be leaking into one cylinder. There, the water is heated by the burned gasoline combustion, and leaves the engine as white / grey steam through the exhaust system.
If you start your car COLD, and open the radiator cap (not the coolant reserve tank) and wait for the water to heat up, and start circulating.
Then use your nose to smell the coolant as it passes rapidly past the open cap. If you can smell exhaust gases, and see bubbles, then you have a break in your head gasket.
On a V6 engine, there will be two head gaskets, so do further checks to determine which one is broken. (leak down pressure test).
Don't let your engine get so hot that the engine lights come on. You run the risk of warping the aluminum head, making repairs even more expensive. Maybe it's too late to save the head?
When the engine is first started up, run your fingers along the exhaust pipe and try to "feel" for the air / exhaust leak. You'll have 3 minutes before the pipes are too hot to touch.
There are several possible variability's that may be. First of all I need more information about your vehicle to precisely diagnose it but. When the check engine light come on it mean that there is a fault and the information about that fault is store in the ECM . Its stored in the form of a code. Depending on what OBD system in your car matter on are the possible way of retrieving the trouble shooting code or codes that stored in the ECM regardless it does sound that you may have exhaust get into you cooling system. Ya Just as I thought the other answers you received are dead on what it most likely the case. You also must find out what caused the care to over heat in the first place. like bad thermostat or fan switch sensors if electric fans or fan clutch if mechanical
