As a native english speaker, I find it confusing that the germanic languages have no progressive or "-ing" verb tenses.

That should work.
eta: sich etwas vornehmen = planning to do something
Think that works in this context.
"Wie konnten sie etwas wissen, von den Dingen, die ich mir wirklich vorgenommen hatte zu tun?"
Unless you mean it more in a secretive way, like they assume you would do one thing, but you had something else in mind all along.
"Wie konnten sie etwas wissen von den Dingen, die ich tatsächlich vorhatte?"
