i am going into 8th grade last year middle school thank god and i want some healthy yet yummy lunches and i hate the lunch that the schools sell
i am looking for
1 main dish sandwich thing
1 or 2 sides
and maybe a dessert and a drink
heres what i dont like
tomatos although i do like things made from tomatoes
cucumber
and i have braces and i only have 2 molars on ech side of my mouth because i recently had teeth pulled out o it can be hard to eat

Grilled cheese
MAKES 4 SANDWICHES
ingredients
3 chorizo sausages (6 ounces), thinly sliced on the diagonal
2 tablespoons unsalted butter, softened
8 slices of sourdough bread, cut from a pullman loaf
6 ounces Pepper Jack cheese, thinly sliced
2 tablespoons drained and sliced pickled jalapeños
6 ounces Havarti cheese, thinly sliced
directions
In a large skillet, cook the sliced chorizo over moderately high heat, stirring occasionally, until lightly browned, about 3 minutes. Drain the chorizo on paper towels and wipe out the skillet.
Butter the bread on 1 side and turn 4 slices buttered side down on a work surface. Top with Pepper Jack, chorizo, pickled jalapeños and Havarti. Close the sandwiches with the remaining bread slices, turning the buttered side up.
Preheat 2 large skillets. Add the sandwiches and cook over moderate heat, turning once, until the bread is golden and crisp, about 8 minutes. Cut the sandwiches in half and serve.

white Bread,( One loaf)
grated cheddar
2 heaping tablespoons of mayonaise
1TBSP of sandwich relish
2 TBSP of Ketchup
1 TBSP of Margarine
Set aside the bread, mix rest of ingredients together.
Paste one side of one slice of bread with mixture.
Place together with another slice of bread

Egg Salad Pizza Cones
(Makes 6 servings)
• 1/4 cup bottled reduced-fat creamy Italian salad dressing
• 1/2 teaspoon Italian seasoning, crushed
• 6 hard-cooked eggs, chopped
• 1/4 cup sliced green onions with tops
• 1/4 cup minced pepperoni
• 6 plain ice cream cones
• Chopped mushrooms, green peppers, black olives as desired
• 3/4 cup pizza sauce
• 2 tablespoons grated Parmesan cheese
In medium bowl, stir together dressing and seasoning. Stir in eggs, onions and pepperoni. Cover and refrigerate until ready to serve.
To serve, scoop about 1/3 cup of the mixture into each cone. Top with about 2 tablespoons pizza sauce and mushrooms, peppers and olives as desired. Sprinkle each with about 1 teaspoon cheese

Ingredients
Good quality mayonnaise
Lemon juice (freshly sequeezed)
white pepper (freshly grounded)
salt
boiled eggs
green apples (peel the skin and chop finely)
1) Mix the mayo with fresh lemon juice, white pepper and salt in a bowl
2) Crushed the eggs with a spoon into the mayo dressing then add apples in to the mixture.
3) Spread the mixture on the bread and sandwich it

Macadamia Nut Cookies
2 cups flour
1 cup powdered sugar
1/2 cup cornstarch
1 cup butter
1/2 cup chopped macadamia nuts
1 egg yolk
1-1/2 tsp finely shredded orange peel
2 tbls. orange juice
6 oz. white chocolate chips
Preheat oven to 350*
Combine flour, sugar and cornstarch. Cut in butter until mixture resembles coarse crumbs.Mix in nuts and choc. pieces.In a large bowl combine egg yolk. orange peel and oj juice.Add egg mixture to flour mixture;stirring until moistened Knead dough until it forms a ball. Shape dough into 1-1/4" balls and place 2 inches apart on ungreased cookie sheet. Dip bottom of glass in gradulated sugar and flatten each ball to 1/4' thickness. Bake 12-15 min or until edges are set and surfaces are dry. Makes about 36 cookies
You can make yourself sandwiches (BLTs and Chicken mayo and lettuce are my favourites).
Personally I am not a huge sandwich person unless they are freshly made. I make myself greek salad by cutting tomato and cucumber (but if you don't like these you can use capsicum), mixed leaves, some avocado and crumbled feta cheese. In Australia these don't seem to get too hot out of the fridge so maybe a good one to try?
Fruit like grapes, peaches, mangoes, nectarines, mandarins, kiwi fruit are all good especially if you cut them in advance and can just nibble on them.
Mini quiches or frittatas are good (using low fat dairy)...
Rosti (potato pancakes) are good (grate potato - squeeze to get rid of excess moisture, mix with one egg and some flour and fry using oil spray and a LITTLE bit of butter to taste). If you like you can throw some grated zucchini/corgette and/or sweet potato into the mix. You can then serve them with some thin sliced ham or some salad or smoked salmon or poached eggs if you are at home...
For something sweet, pancakes are good. Mix together plain flour, baking powder, sugar, 3 egg yolks and milk. Fold in 3 beaten egg whites (should be beaten until stiff peaks form). Fry in a pan and throw some fruit (banana, blueberries etc) before you flip. Serve with jam/jelly, maple syrup or lemon juice and sugar.
make yourself a pb & j sandwich or ham and cheese. and if you have leftovers and yer school has a microwave, you can take pasta or something, and even if your school doesn't have a microwave, cold pasta is still great :) and sometimes you can go to trader joe's or ralphs and get their ready to eat salad. those salads are sooooo yummy :) side meals can be like an apple or carrot sticks and maybe a small bag of chips.
