Im trying to add Minecraft Forge onto Minecraft on my macbook air for the second time. I had to delete minecraft as a whole and am starting from scratch again. Previously I had been able to open my minecraft.jar before with The Unarchiver, however it will not open now. Ive tried the archive utility and Stuffit as well and none of them seem to work. Im running OSX 10.7.5 and am not sure what to do to be able to get the .jar file open.

Had same problem on my macbook air just now with .jar not unarchiving with 'the unarchiver'. I have done this same action many, many times on my other macs and not had a problem. I have two macbook airs and the .jar on the other one unarchives just fine.
I looked at the version numbers for clues. The working version of unarchiver was 3.2, while the not working version was 3.4 (current release). I noticed that none of the releases have .jar in the list of file extensions in the preferences that the unarchiver is supposed to work for. So, it seems that the newer version might be recognising that .jar is not a supported file extension and not doing anything with the file. Version 3.2 just goes ahead and performs its extraction function, perhaps without checking whether the file extension is supported. So, while the newer version is more sophisticated, it seems to be less effective when it comes to .jar ...just a theory.
Anyway, installing 3.2 worked for me. Now when I right click I get the option to extract with either v3.4 or v3.2. BTW - v3.3 did not work - had to go back to 3.2, which fortunately I had on my other machine, so I could copy it across.
