I just watched a documentary about a posh hotel, and there was a sandwich chef. He makes about 400 afternoon teas per day, and I was wondering if the environment is hot for him, like a normal restaurant? I don't suppose his working area is near the hot food but I could be wrong.

not all restaurant kitchens are unairconditioned you know.
I highly doubt he makes sandwiches while hovering over a hot stove.
