Which do you like best and why?

Honestly, it just depends on the anime. For instance, I'll enjoy a good old, run-of-the-mill shounen every now and then. I mean, I love Dragon Ball Z. It's a classic! And, I do watch Bleach... but I don't enjoy it. The fights CAN be awesome, but it's just... Meh... There ARE some good shounen animes, though! I think To Aru Majutsu no Index was great, because it doesn't do the whole "shounen" thing, like "Durp, I'm a loser but I suddenly get really strong!" Well, okay... Touma is kind of a loser, but at least he and everybody else is well-aware of his power. It's not the greatest anime out there, but there are other things about it that make it much more enjoyable than SOME of the more shitty shounens I've been unfortunate to come across (names will be withheld ;D).
Seinen... If I had a gun pointed at me and it was a life or death situation to choose between these two genres, I'd honestly pick seinen. Like I said, though, it just depends ALL on the anime for me. Some of my favorite animes are seinen. FLCL, Welcome to the NHK!, Neon Genesis Evangelion and Bakemonogatari... Those are four of my top five favorites... All seinen. Code Geass is on the list, too, but it's, for some odd reason, considered shounen. IMO, Code Geass is just too intelligent to be shounen... I, for one, would definitely consider it a seinen anime, but others will beg to differ.
Of course, along with the seinen genre, you have various moe-blobs... Like K-ON!, which is totally on my favorites list (just not on my top-five list). There's just so much to offer with seinen anime, you know? With shounen, it's just, "Hey, I'm gonna beat you up for 20 episodes!" but with seinen, it's, "I'm going to do something logical, tell a good story with it and beat the hell out of you for one episode! No, make it ten minutes!"
Here's the way I look at it:
Shounen- All brawn no brains...
Seinen- The cool kid who everybody likes, and even has perfect grades and athletic abilities.
Of course, I do come across very, very disappointing seinens every so often (just as often as I come across run-of-the-mill, cookie-cutter shounens!).
In the end, it's as I said... Depends on the anime, but if I absolutely HAD to choose between the two, it's be the much more intelligent brother of shounen: seinen.
I like them both I really do not think I can say I like one better than the other. Sometimes I like my Action oriented Shounen with the happy endings and lightheartedness type of manga and anime, but other times I am into character development that has a bit of sophistication containing a little more realism and the little gray areas instead of really only the good and bad found in Shounen.
In all honesty I watch more Shounen anime but that is mainly because there are more Shounen anime out there, but that does not stop me from enjoying Seinen anime. I don't really use whither it is Shounen or Seinen to decide if I watch or read anime and manga I just look and see if I like the summary if it does I take a look and if it seems good then I watch it or read it.
I do admit I do like Shounen as it allows me to escape reality and be happy and ignore my worries, but then there are Seinen that I enjoy because well you can always say well at least my life is not like that.
Well, most of my favourite series are shounen, so shounen. But I do love some seinen. (Especially psychologically focused ones)
Seinen has more realistic settings and relationships, usually more experimental stories/characters and usually have deeper plots, which is good... however I suppose I like shounen more because, as someone said before, shounen is better for escaping the depressing world at times, and the happy ending/ everything is A-OK! endings are, while clichè, still nice. Shounen is usually much funnier, and are easier to get into usually.
And while not all things fall into those categories, Ah! My Goddess! was, like someone said before, very mild for seinen standards, whereas things like Neon Genesis Evangelion are very dark for shounen settings.
Now for the real question - Shoujo or Josei?

Seinen really, when i was younger prolly more shounen, but i like the more mature, themes
and I also like the more complex story lines. I guess i really fit in the seinen age range cause
I'm 22, and most anime I like now, I prolly wouldn't have when I was like 13. So I guess
they do a good job 'targeting' specific age groups.
Wow, that's a hard question to answer. I have favorites in both choices. I'd say an equal amount of what I watch/read is shounen or seinen. I think my mood will determine which category I choose to watch/read at the time rather than an overall preference.
I read both of them,but since you asked the question i looked by the titles of my favorites and found that I do liked Shounen better than Seinen ,

I like some titles in each category. I'm a little surprised that a mild title like Ah My Goddess would be seinen. My favorite Takahashi series is Maison Ikkoku, which is her only seinen series according to your link.
But if I had to choose: on the whole I find shonen more fun. I'm not a fan of violence, and not a fan of gore. I don't care about ecchi one way or the other: it doesn't bother me, but neither does it attract me. I"m old enough to not care about how "adult/mature" something is, so I don't look for "grownup" things just for the sake of reading "grownup" things. The "realistic" treatment of relationships means more of them don't work out and I like happy endings. (I don't need some idiot author beating me over the head with the fact that life sucks. I read to escape from the fact that life sucks. :-) )

Honestly, there are more animes on the Shounen list than the Seinen list that I like soooo,
I guess i'm a Shounen fan~! XD

Does Shounen-ai Count?? JK I like Yaoi more than shounen-ai. Anyway. I prefer Seinen. It usually has a more mature storyline. Don't get me wrong. I like Shounen too.
Maybe shounen.
The first reason is that seinen doesn't entertain me. Its plot is too serious and stuffed, or even sometimes pissed. I have tried reading nana but i gave up after one volume.
The second reason: i read manga mostly for entertainment and as a source to hone my drawing skill. So, of course i prefer shounen with a lot of action scene. Actually, thanks to NARUTO I learned how to draw more natural hands
