People keep giving me crockpots for some reason, so I got this book The Simple Little Vegan Slow Cooker. It's so easy cause you just throw everything in and stir, then let it cook for 6 to 8 hours. You could prepare before work and it's ready when you get home. Even my bf can do it.
I love cooking so most of my cookbooks aren't QUICK. But the yummiest book I have is Vegan with a Vengeance. It's the greatest cookbook ever made. I've eaten every recipe multiple times. I LOVE it.
My husband bought me this book a year ago and I learned ALOT. Cooking and preparing vegetarian meals doesn't have to be complicated at all. There was a world of new ingredients that I had been missing out on. Ingredients such as miso, bulgur, jicama, fava beans, are all ingredients that were readily available to me, yet I had never explored them prior to becoming vegetarian. The recipes are simple yet balanced in flavor. A real a treat for ready tastebuds. Okay, let me stop advertizing *giggles*The book has many useful cooking tips and tools as well. LOL the book is sitting here right on my computer desk. Good book, even for amateur cooks. The recipes have icons on them to indicate if it's "F"- Fast, "M"- Make Ahead, and/or "V"- Vegan. I went vegan awhile back so I thumb through it and look for vegan goodies. Oh my, I must have made dozens of the simple recipes in this book. Love it, love it, love it.
If you're already higher than basic level of cooking, I really like "How to Cook Everything Vegetarian" by Mark Bittman. Simple instructions for tons of fast meals. He's known for very minimalist gourmet cooking.
