Any suggestions for a quick, cheap and easy dessert for approx 40 people....any help will greatly be appreciated....strawberry pretzle salad and blueberry tart are already taken.
Make banana-strawberry Jell-O and allow to get firm.
Add layer of cut bananas, then a layer of crushed pineapple.
Prepare instant piatachio pudding and pour over pineapple.
Sprinkle with a layer of coconut, then spread with a layer of Cool Whip. Sprinkle with walnut and cherries to decorate top. Just add ingredients in order and then refrigerate for a great, easy, Summer dessert!
Tear 1/2 of an angel food cake into 1 inch pieces and place in a bowl. Spoon over a 1-pound 5-ounce can of cherry pie filling, then 1/2 of the pudding mixture. Repeat layers again. Top with Cool Whip.
Pudding Mixture:
Combine a 3 1/2 ounce package of instant vanilla (I use French Vanilla) pudding, 1 1/2 cups milk and 1 cup sour cream. Beat and pour over cake.
This is better if it sets for a few hours before eating.

Angel Food Rocky Road
2 packages chocolate chips
3 eggs, separated
1 pint whipping cream
2 tablespoons granulated sugar
Angel food cake
Melt chocolate chips and sugar together over hot water. Beat egg yolks and gradually add chip mixture. Cool 5 minutes. Beat egg whites until stiff and fold into chocolate mixture. Beat whipping cream until stiff, then fold into mixture. Line a buttered 12 x 8-inch pan with bite-size pieces of angel food cake. Cover cake with a layer of sauce. Repeat the process ending with sauce on top. Sprinkle with nuts. Chill overnight.
1. In a 1 quart saucepan, stir together sugar, cornstarch and salt. Place over medium-low heat and stir in eggs and milk. Cook, stirring, until mixture thickens enough to coat the back of a metal spoon. Stir in vanilla and butter. Let cool briefly and serve warm, or chill in refrigerator until serving.
Make one package of vanilla Jello instant pudding and another of chocolate. Layer the puddings in a bowl (doesn't have to be perfect, and you can make as many or as few "pudding layers" as you want). Top with Cool Whip (optional: add a couple drops of food coloring to the whip for a nice effect) and then top again with whatever you like...chocolate sprinkles, colored sprinkles, crushed oreos, M&Ms, candy pieces, banana, or flaked coconut are all good choices. People eat it up in a jiffy!
The cheapest and easiest dessert you can do for 40 people is to do a sheet cake..... you can make it from scratch or make it from mix (honestly cheaper to do it this way - $1 for a box - just add egg and oil) - but either way, it serves a lot of people and is easiest to transport without worry about refrigeration.
1 box chocolate cake mix plus ingredients according to box
4 sm boxes of Instant Choc. pudding
4- 8-oz. cool Whip
* oreo cookies crumbs (optional)
* melted chocolate (optional)
* chopped heath bars (optional)
* chocolate chips (optional)
This really looks nice in a glass pyrex dish or a trifle bowl.
Bake cake according to directions.
and prepare pudding according to box.
When cake is cooled.
Layer as follows:
half the cake - crumbled
half the pudding ( 2 boxes prepared)
16 oz. cool whip
optional ingredients
Repeat-
* If you want you can sprinkle oreo crumbs, heath bars, and chocolate chips on the cool whip layers. On the final cool whip layer you can drizzle melted chocolate and sprinkle oreo crumbs and chocolate chips. I added oreo cookie crumbs and leftover melted chocolate in between the layers.
get some boxes of jello instant pudding (i prefer the chocolate). put in parfait glasses or small bowls and top with berries. i layer the chocolate pudding w/strawberry slices for a 'chocolate covered strawberry pudding'....actually really good and super cheap!
Chocolate graham crackers layered between creamy vanilla custard, topped with chocolate glaze. Very rich and habit forming. Everyone I have made this for has fallen in love with it!
In a large bowl, combine pudding mix and 3 cups milk; mix well. Fold in whipped topping and beat with mixer for 2 minutes.
In a buttered 9x13 inch baking dish, spread a layer of graham crackers on the bottom of the dish.
Spread 1/2 of the pudding mixture over crackers, then top with graham crackers. Spread remaining pudding over crackers; top second pudding layer with another layer of crackers.
To make topping: In a medium saucepan over medium-high heat, combine 1/4 cup milk, cocoa and sugar and allow to boil for 1 minute; remove from heat and add butter and vanilla. Mix well and cool.
Pour sauce over graham cracker layer and refrigerate until set; serve.
Mix cake mix with melted butter or margarine and condensed milk. Spread out 1/2 of the mixture into a 9 x 13 inch pan.
Bake at 350 degrees F (175 degrees C) for 10 minutes.
Slice candy bars into little slices. Lay these on top of the baked crust. With the remaining batter-crumble it on top of the candy bars. It will have a crumbly texture. No need to spread it on top to make it smooth.
Put it back into the oven and bake it for another 20 minutes.
In a large mixing bowl, beat pudding mix and milk 2 minutes. Blend in condensed milk until smooth. Stir in vanilla and fold in whipped topping. Layer wafers, bananas and pudding mixture in a glass serving bowl. Chill until serving.
