I am in 10th grade and I am currently taking only one AP class, and next year, my high school class schedule will only allow me to take three AP classes. I really want to take more, is there a way I can take some after school, online, or during the summer? And make it count toward my high school gpa? I can only take 7 classes a year at my high school. This is really important to me because I want a really high gpa for my junior year of high school.

I would advise against taking more than 3 AP classes. While getting As in all of the classes would improve your weighted gpa, you could also become overwhelmed and have your gpa go down.
I've seen plenty of people do more than 3 AP classes without a problem. You know yourself and your capabilities.
There is the expensive option of taking AP classes with FLVS.net which depending on your state will count towards your GPA.
But I would look into dual enrollment. Dual enrollment is a program most local colleges have where you can take college classes in their college while attending highschool and earn college and highschool credits at the same time
Dual Enrollment is weighted the same as AP credits
