Image Size vs. Canvas Size?

I have a particular photo that I don't want cropped at all. Some "unwanted" cropping automatically occurs during processing. Some photos are changed so drastically that the composition of the image is lost. My customer wants an 8x10 of a particular photo but if I try to re-size (prior to processing) in Photoshop the photo ends up still cropped too much when I don't want it cropped at all.

How do photographer's resolve this problem? Do they re-size their photos prior to processing? How or what is the best way to retain the dimensions of a photo? This particular photo is 300 pixels, Document size: 8.64x12.907 inches.

Pixel Dimensions: 2592x3872

I am relatively new to Photoshop and have not had instruction on resizing, etc.

How can I keep a photo's dimensions as is without unwanted cropping?
