My health seems to be dependent on my digestion quality.
After a heavy meal (ie: involving eithe bread or meat) , my digestion seems to take a long time and require a lot of energy.
If I have just vegetables, and simple food, then I feel OK.
Is it my liver? I know the liver releases bile to break down the food, but how can I track the problem down and deal with this?

Well, I have heard that meat is easier to digest then vegetables, because it's protein is more like ours! If you had soy, maybe it would be worse? But then again, soy may be good for the liver!
Anyway, I understand what you are talking about. It seems to me like, yes, you could be right, and your liver IS under preforming.
Eat until you are like 70 or 80 percent full... I don't remember which one lol. But I hope you get the idea. Your digestion will become more effective.
Or try protein shakes or something, the protein is already broken down. easier to digest.
Or try herbs like milk thistle or something. there must be some good ones for digestion, or for general health. also, if you have good energy, it may make it easier for you to digest things better. so herbs could help. or vitamins, like b complex (b100 complex too).
the most critical question here is this
what is your age
and especiallly
WHY would your lvier be under performing?
That's completely normal. Some foods are just easier to digest than others.
