Good luck!
I too loved those shows, especially Eliza Thornberry, Hey Arnold and the Rugrats. You'll notice that they sometimes play them as reruns on Nickelodeon, but in the late hours of night like midnight or 3 am. Unfortunately, Nickelodeon doesn't have a channel that plays their old shows like how Cartoon Network has Boomerang. Both these channels seem to be losing the charisma and originality that were seen in their original shows.
Anyway, to see the Nickelodeon classics you can just buy the DVD/VHS (if you still have a VHS player) of one of the show's series. If you can't find them in stores, and you probably won't find them out at stores today, just check online stores like eBay or Amazon.
They have a channel for that called "nicktoons".
Check your cable provider for channel listings, but you could always try youtube because thats always free
The Fresh Prince of Bel-Air!
try youtube, google vids, myspace vids ect...
just type what show you want and the episode, you should be able to find it.
