If I were you, I would go with something simpler, like plastic flowers and a handmade card.

I say plastic flowers because many people are allergic to flower pollen. Everyone seems to like chocolates, but people can be veyr picky about it, or maybe see it as a little unproffessional, depending on if your teacher is very strict or not.

I suggested a handmade card because people really appreciate gifts that are not store bought. Many new teachers are actually nervous abou meeting their students, so a card might help her/him feel a little bit less uneasy.
