for the third and final time. In the middle of a game the screen went white with just specks of color. It had a good long life (5+ years) and served me well. So I purchased a new XBox yesterday. I know this will be so obvious that it's smacking me in the face...but how to I get my saved games off the old hard drive?

You need the Xbox 360 hard drive transfer cable.
Don't buy it from the store, buy a used one from Gamestop or eBay, then sell it back to them.
Remove the hard drive from your old 360 and connect it to the cable. Connect the cable to the new 360. The connectors only go one way so don't worry.
Power on the new 360. It should automatically detect you have the transfer cable connected and it will ask you what you want to do. You want to transfer the external drive to the internal one, if that wasn't clear.
*NOTE* This will erase the external hard drive.
This will transfer your profile(s), save games, DLC, or arcade games you have downloaded.
When it's done, power off the 360, remove the transfer cable. Powering on your new 360 should show that all your stuff is there.
You should now go online to http://www.xbox.com/ and transfer the licenses to your new Xbox. This way other profiles on your new Xbox can still access the DLC and/or games. The link is on their front page, or under Support. Follow the directions.
